I have a mobster in my tank named Bed Bug Eddie. Who is he? Someone hacked the legs of one of my crabs. Was it one of these fish? Or another crab?

Looks like a molt to me.
Yeah looks like a hermit crab molt to me. Perhaps bed bug Eddie is still out there with his legs!

Inverts such as crabs and shrimp shed their outer "skin" as they grow.

Hermit crabs shed their shells (not the snail shells on their back, but their exoskeleton) every once and a while as they grow. They push off their old exoskeleton and the new one they formed hardens. This picture is of a molt (only the old exoskeleton), and not the animal itself.
