Can I get some thoughts on this? IM 200, 70.9x30. This is my first time doing anything really big. It’s going to be SPS dominant.

I’m thinking I should add some more caves, maybe over on the right behind that arch will be a good start? Anything I should look at doing to make the fish happy? Does the height look good? Highest point is 14 in, tank height it 21 in.

Looks good. You may want some spaces with a bit more height, but that's really just personal preference. Having lower rockwork leaves space for nice tall colonies of coral (if you're going to add any). You can add more caves if you like, but again thats really just personal preference.
