My Yasha goby (not sure of the sex) is acting normally, eating and being active outside (her/his?) hole. My question stems from (he/her?) being very fat and what appears to be poop/constipation. I feed pellets and mysis, and put in nori but (he/she) won’t touch it.

Appears to be constipation and the foods you mentioned - Pellets can contribute to this and Mysis can leave mucus in the stomach lining. Skip feeding for 12 hours in which you should see this go down. If not, feed brine shrimp which will act as a laxative. Add to diet, LRS fish Frenzy or nano frenzy, plankton and even Formula one frozen.

How DARE you assume that fish's gender!!!

All kidding aside, I'm sure it's fine. It looks very healthy, minus the bloat. Maybe cut back feeding for a few days.

That's either a female or an immature fish. Males have a black spot on their pelvic fin, according to a fish breeder. That introduces another possibility - that the fish is "egg bound". Try fasting for 24 hours and then the brine shrimp trick. If neither fix the issue, it may be full of eggs.
