Should I order fish now or wait till spring i was just scouring your website but I live in maine... and have a white Christmas that was 16°f... but I need a new fish or 2

We ship all year long and in freezing temps as well. We use really good long term heat packs. You can place order now if you don't want the fish right away. Or 2nd option is also hold at a nearest ups store for you to self pickup.

My ups driver's always super inconsistent, kinda to be expected in a rural area I suppose, and this time of year holding at the ups depot is probably the better option than ramming the backrooms all day I assume I should probably go back to the website and check it out again. Is the Christmas code going to be good in the morning if I wanted to let the wife pick a fish as well?

Yes the code is good for till tomorrow.
If ups driver is inconsistent then there are only 2 options.
1. Wait till weather is more favorable or
2. To hold at ups location where ots not subjected to cold harsh weather.
