I would like to take this platygyra coral, remove the stem from it's plug, and glue it to my rock. It lost track of its growth the past few weeks and now it has grown down over the plug, so it isn't clear I can handle it without grabbing it by the colorful polyp part of the coral. Is it okay to gently grab it by the colorful parts? Or what's the best way to proceed?

That's hiding the disc under it so well, why not just cut the bottom spike off the plug, the glue the disc, complete with coral, to your rock?

Yes, this is the plan, I may have just worded it poorly in the OP. Even then, I will still have to handle the polyp portion a bit, but sounds like I should just be gentle but give it a go.
