Is a good point about having either a lot of vinegar, or a lot of kalk, in order to stop bacteria. Somehow I missed that.

Any examples with numbers?

If there is excess solid lime, that is adequate. If the pH is below 3 or above 11, it is likely fine. :)

It will take about 31 grams (4-8 tablespoons depending on bulk density) of calcium hydroxide to neutralize a liter of vinegar.
