I bought my equipment a while ago and havent looked at most it while Ive been working on my build. I thought for sure that I bought an 8 bulb t5 setup but apparently I ordered 6 bulbs. I think I'll probably go with 8 in the end but Ive never changed lighting on a tank once running. Would I run into problems if I start with the 6 bulbs and not increase the lighting until the tank is mature and ready for higher par demanding critters?

Should be fine. Just like you’re supposed to change one bulb at a time to reduce the possibility of bleaching your coral just put old bulbs into the new fixture when you swap it out. Burn in your bulbs as you normally would on a separate fixture and you’ll be all set.
