Overflow Advise

I'm having a custom tank built and I'm trying to decide on overflow options I've never had these a glass tank came with a overflow with Herbie style plumbing similar to The Shadow. New overflow options are Shadow version 3 or Coast to Coast and I have no idea what the difference is really need some advice on this my main concern is having a quiet running system.

What size tank?
Sounds like a bean animal with 3 Drains. 1 main, 1 open, and 1 emergency.

Most* beans made are pretty quiet.
As long as the water doesn't drop to far over the weir.

I had the shadow, it's usually quiet unless you crank up the flow to the max.
