will a skimmer remove/inactivate copper?

I know a skimmer will remove some water but can it be used with copper at all?

I believe it dilutes the copper

It only removes the copper present in the water in the collection cup. So, very little.

I've run skimmers during cupramine treatment multiple times without a drop in copper. You should be fine.

I know to stop using charcoal, but can a hang on the back filter be used for simple filtration using ‘only’ loose filter floss—or will that strip out the copper as well? How about actual filer pads (but again, no charcoal)? Many thanks!

I use an aquaclear hob with just the foam block & haven't noticed any drop in copper. Done it several times, so you should be fine.
