Per title, what are best usage cases for T vs Y type fittings?

When does a person use one vs the other?

No difference other then the piping routing. They both accomplish the same thing. One sends the piping in 2 different direction, the other sends them in the same direction.

Great, I guess I was overthinking it or was hoping that perhaps someone had a different angle.

RO tubing isn't the most flexible thing so unless you actually want the RO tubing to make a 90° turn you're better with the Y to reduce the chance of kinking or an exaggerated loop when you want to go straight.
