My 75g tank been running for 2 months now with live stock. 6 fish, some snails, hermit crabs and some soft coral. I have a skimmer and a five. My question is do I do a water change if no nitrates are present?

Nah, I reckon you are good, presuming everything else is also good. If there's consumption of calcium or whatever and your main method of replenishment are water changes, then you gotta measure them and make a decision based on that too.
