My other problem is that i have since identified two porcelain crabs (also hitchhikers) and i want to make sure they are safe because i am actually very happy they are there and want them to stay
They are harmless. They will not harm any coral. They constantly filters the water for planktonic food. They will not harm healthy fish. You can offer them meaty food but they are filter feeders so they can also live without it

Would a 1 inch gorilla crab be able to kill a coral banded shrimp?
Actually they grow very fast so noone can guess what damage they can do. This is the biggest one I had caught

Ok so the crab was about an inch big and the body looked "fluffy" and one/the only arm was entirely black not just the tip and was out during plain light to dig around the sand a bit and got super scared when it saw me and ran away, is it still probably a gorilla crab?
