Thanksgiving Turkey

As some of us or many of us

will be cooking a turkey this Thursday ( or maybe before) I thought it would be fun to see how everyone cooks theirs.
We will be serving 3 different types , traditional (in the oven with salt pepper, a little melted butter on top) brined 2 days before and then fried and a smoked turkey, all done on Thursday

yep we are up early that day

Just salt and pepper cause we really want the smokiness flavor to come through. How about you?

Of course! Do you think I would do it any other way?!?

I have 33 coming ... So traditional brined baked turkey and deep fried for me!

First we boil the linguini, then we stuff the calamari, open the clams, shuck the oysters, sauté the flounders, steam the lobsters, simmer the scungel and then if we have time, we put a turkey in the oven.
I mean, it is Thanksgiving.

Are you making a livorno for the calamari, to just a simple tomato sauce?

for you smokers, how are you smoking it? I'm doing mine on my green egg, with light smoke as I heard the smokiness of turkey can be a bit overwhelming. And what is your brine recipe?
