I think the 120 Orphek makes sense for my tank, would one of blue plus, blue sky, or UV improve color ?

I've never had or used one but the Orphek lights are high quality and get great reviews.
I have nothing that would benefit from them at all so I went nicrew.
Just couldn't justify the cost but I researched them at length.
I'd say my rookie lighting badge says go for it!
Colors someone else will tell you not me but quality wise it's a yes.

UV won't do much for color. Blue Sky is less dark blue, Blue Plus is more dark blue.

Ok, Orphek says Blue Sky is strongest fluorescent pop, Blue Plus is widest fluorescent pop.

To me, that means more colors will potentially fluoresce with the Blue Plus but you'll get a deeper pop with the Blue Sky so Blue Sky is probably darker blue...
